If your character class allows you to change spells, then the only thing you need to do is open up your character sheet and select the character you wish to change their spells. You will see all the available level 1, level 2, and so on. Remove the ones you don’t need and select the ones you would like your character to use now. This only applies to classes that use set spells such as Wizards and Clerics. The only requirement is that you need to be idle, with no actions being performed, which means that you can’t change spells during combat.

In the case of the Warlock, you can only change spells when you level up and you can only pick one spell to change. You have the option to either change one spell after levelling up or freely switch your spells before a battle, you need to choose wisely for your character to adapt to certain battles and enemies that are especially weak towards certain types of spells.
