In a world as vast as The Lands Between in Elden Ring, there's always something for you to discover. There are various spells for you to find or purchase from special Merchants. You can stumble across bosses as you explore, so you always need to be prepared for a fight. Also, as well as spells, there are numerous other items for you to collect.
While you're in the game, you'll find that there are some areas or items that you cannot get to. They're sealed off and you'll need to find Stonesword Keys to unlock them. These keys can be bought from some Merchants, or they can be found by exploring the map. However, in a game as big as this one, it's quite easy to miss them.
