Getting Nature Mints in Pokemon Scarlet and Violet is easier than ever before.
To get Nature Mints in Pokemon Scarlet and Violet, you just need to save your cash and visit a shop in the same town that houses the Ghost-type Gym Leader - Montenevera. There, you'll be able to buy Nature Mints at 20k Pokedollars each, or use your League Points to the same conversion.
They're relatively expensive, but you shouldn't need too many of them if you plan your competitive team properly. If you keep beating wild Tera Pokemon and participating in raids, you'll stand to get League Points quickly.
Alternatively, you can find nature mints as random drops in the open-world as well. They're incredibly rare, but you'll like come across several as you work your way to the Pokemon Scarlet and Violet post game. We sure did.

Simply put, Mints change the stats of the Pokemon you feed them to match the nature of the mint type. A Pokemon's nature (like Adamant, Quirky, or Modest) raises a set stat and lowers another.
When you run into a wild Pokemon, its nature is typically randomly assigned, which can mean catching a Pokemon with a nature that negatively affects the stat it relies on the most. That's where Nature Mints come in.
The nature of the Pokemon you use them on won't visibly change, but you'll notice the positively and negatively affected stats of that Pokemon will change to match the nature of the mint you give them, which goes a long way in avoiding the grind of finding a specific Pokemon with the right nature.
